1 MEDIUM ONION CHOPPED
1 LARGE CARROT,PELLED AND CHOPPED
1 STALK OF CELERY
2 LARGE CLOVES OF GARLIC, MINCED
1/2 TSP. DRIED OREGANO
1 MEDIUM POTATO, PEELED AND DICED
2 CUPS CHICKEN BROTH
1 28 OZ. DICED TOMATOES
4-6 OZ. CONECUH SAUSAGE,SLICED
1 19 OZ. CAN BLACK BEANS

Directions:
SAUTE ALL VEGATABLES IN LARGE POT AND SMALL AMOUNT OF OIL. STIR IN GARLIC,OREGANO,POTATO,BROTH AND TOMATOES; HEAT TO BOILING. STIR IN SAUSAGE. COVER AND SIMMER FOR 30 MINUTES. DRAIN AND RINSE BEANS ADD TO SOUP. ADD SALT AND PEPPER TO TASTE.
