2 c. flour
2 c. sugar
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
4 eggs
1 c. vegetable oil
4 c. grated raw carrots (about 8 big ones)
1/2 c. chopped pecans

Directions:
Directions:
Thoroughly stir together flour, sugar, soda, salt and cinnamon. In large mixer bowl, beat eggs until frothy; slowly beat in oil. Gradually add flour mixture, beating until smooth. Mix in carrots and nuts. Pour into three greased and floured 8 or 9" pans. Bake in 350 oven for 25-30 min. Cool in pans 10 min. Remove from pans. Cool completely on racks. Top with Cream Cheese Frosting.
