4-5 boneless chicken breasts
1 small flat can sliced black olives, drained
1 flat can sliced water chestnuts, drained
2 avocados, chopped
Mayonnaise
Salt
Pepper
Garlic powder

Directions:
Directions:
Cube partially frozen chicken breasts. Cover with water. Add salt, pepper and liberal amount of garlic powder. Bring to a boil. Lower heat and cook for 30 minutes. Drain, rinse and place in freezer to cook approximately 30 minutes.

Once cooled, add olives, water chestnuts and chopped avocados. Mix well. Add more garlic powder and salt and pepper to taste. Add approximately 1/4 of the quart size jar of mayonnaise. Mix well. Add more mayonnaise if needed. Serve on mini-croissants lined with crisp green lettuce.
