1 pounds carrots (Grate, cook for 10 minutes and drain well)
3 whole eggs
3/4 cups sugar
1/3 pounds butter or margarine
ounce vanilla
pinch of salt
1 cups evaporated milk (Carnation)
Fresh ground nutmeg, optional





Directions:
Directions:
Beat eggs and sugar until light and fluffy. Add butter or margarine, milk, salt, vanilla and nutmeg (if desired). Add carrots and continue beating until well combined. Bake in greased casserole at 350 for 20 to 25 minutes or until set.

This is a recipe from Fieldstone Inn in Hiawassee, Georgia. The recipe I received was for 40, so I had to experiment a little to make it for a family. It is a bit like Sweet Potato Pone and is a nice addition to a holiday meal or buffet dinner.
