3-5 tomatoes, diced
1 small jalapeno pepper, minced
3-4 green onions, minced
3-4 garlic cloves, minced
Pinch of sugar
1 1/2 tbsp. red wine vinegar
1 tbsp. olive oil
1/4 c. chopped fresh cilantro
Juice of 1/2 large lime
Salt and freshly ground pepper to taste

Directions:

Mix together gently the tomatoes, jalapeno, onions, garlic, sugar, vinegar, olive oil, cilantro, lime juice, salt and pepper. Let sit to meld flavors at least 30 min. Serve with chips, scrambled eggs or Mexican food.
