1 1/2 cups whole wheat pastry flour
1 tsp baking powder
1 tsp salt
4 eggs
3 T. applesauce
1 T. canola oil
1 cup sucanat or brown sugar
1 cup zylitol or sugar
1 tsp vanilla
1 cup butter
1 cup cocoa
1 cup grated zuchinni or carrots(optional)
1 bag chocolate chips

Directions:

Preheat oven to 350. Grease and flour a cake pan. Mix up all the ingredients except chocolate chips and vegis. Stir them in. Pour into pan and bake for 30 minutes. No longer. Will look kind of doughy. Perfectly ok. Will continue to cook while they are cooling.

A delicious way to use zuchinni if you have some on hand. These are a family favorite of ours. Sometimes we use different chips, and sometimes we will frost them. Tianna asked for brownies for her birthday instead of cake.
