2 c. cooked corn
1 diced avacado
1 pt. halved cherry tomatoes
1/2 c. finely diced red onion
2 tbsp. olive oil
1 tbsp. fresh lime juice
1/2 tsp. lime zest
1/4 c. chopped cilantro
1/4 tsp. salt
1/8 tsp. freshly ground pepper

Place corn in a large bowl. Add avacado, tomatoes and onion. In a separate bowl whisk together olive, lime juice, lime zest, cilantro, sat and pepper. Stir the dressing into the salad and serve.
