2 tablespoons butter or margarine
2 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup milk

Directions:
Directions:
Melt butter in saucepan over low heat. Blend in flour, salt and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. boil and stir 1 minute.

Cheese Sauce: Prepare white sauce. Stir in 1/2 cup shredded cheddar cheese. Heat over low heat, stirring constantly, until cheese is melted and sauce is smooth.

Various ways that mother use to use a basic white sauce:
Add cooked peas and serve over grilled cheese sandwiches (my favorite).
Add chipped beef and serve over toast.
Add chopped hard boiled eggs and serve over toast.
