3 c. cubed potatoes
1 c. water
1/2 c. celery slices
1/2 c. carrot slices
1/4 c. chopped onion
1/2 lb. velveeta cheese, cubed
1 t. salt
1 t. pepper
1 chicken boullion cube
1 1/2 c. milk
2 T. flour

Directions:
Directions:
Combine potatoes, water, celery, carrots, onion and boullion. Cover and simmer for 15 - 20 mins. or until veggies are tender. Mix salt, pepper, milk and flour then add gradually to hot veggies, stirring constantly. When mixture comes to a boil and thickens, add cheese and stir until melted.
