Dressing ingredients to taste..but here is about what I do...
1/2 cup olive oil
1/4 to 1/3 cup balsamic
2 large tablespoons frozen orange juice concentrate
1/2 tbsp dijon mustard
dash salt
dash pepper

mix well and this also keeps for about a week in the fridge and is great on regular salad...

When I first had this salad, it was served with just oil and balsamic...
my mom's salad dressing is much better so I changed the recipe a little. This is a simple and fresh summer type salad so add or take out what you don't like. One hint is to not dress it until immediately before you serve as the feta will absorb the dressing and turn discolored.
