1 Tbsp. olive oil
1 onion, chopped
1 Tbsp. minced garlic
9 medium tomatoes, chopped
3/4 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Cook onion and garlic in oil for about 5 minutes. Add tomatoes. Reduce heat and simmer for 15 minutes or until tomatoes are soft. When cool put in blender and blend until slightly chunky. Salt and pepper to taste.

A great way to use up garden tomatoes in the fall. Recipe can be doubled. Add as many herbs or spices to make the soup your own.
