1 large onion, chopped
2 tbsp. butter
5 large potatoes, sliced
1 qt. chicken broth
1 tbsp salt
2 potatoes, cubed
1 c. celery, sliced
3/4 c. carrots, sliced
1 1/2 c. ham, diced
1 qt. half and half
parsley for garnish

Directions:
Directions:
In a 6-qt cooker, saute the onion and butter together until the onion is clear. Add the 5 sliced potatoes, chicken broth, and salt. Boil 35-40 minutes until tender. Pour into a blender and puree, or use potato mashed to mash ingredients.
In a separate pan in a small amount of water, cook the cubed potatoes, celery, carrots, and ham until vegetables are tender. Drain and add to the pureed mixture.
Slowly add half and half and heat until warm. Do not boil. Garnish with parsley if desired.
