2 tbsp. butter or margarine
2 tbsp flour
1/4 tsp salt
dash of pepper
1/2 cup milk
3 tbsp. grated onion
2 cans tuna
2 cups cracker crumbs (Ritz)
4 eggs, beaten

Directions:
Directions:
Melt butter,remove from heat. Stir in flour, salt and pepper, mix well. Add milk slowly stirring constantly until sauce thickens, cool. Add onion to tuna than add white sauce mix well. Shape into oblong croquettes (logs) using 1 heaping tablespoon for eah log. Roll logs in cracker crumbs, dip in beaten eggs and roll in cracker crumbs again. Place on a platter and chill thoroughly. You can reshape at this time if needed. Fry in oil until brown Drain on paper towels.

I make extra and freeze (before you cook them) so you can just pop them out and fry for another meal. My son LOVES these with ketsup.
