2 1/2lbs. yellow squash sliced
1 med. onion diced
1 stack of saltines crushed
3 tbsp. butter melted
1 egg beaten
1 cup milk
salt & pepper
2 cups shredded cheddar cheese

Directions:
Directions:
Steam squash and onion until tender, drain and mash with fork. I like to leave larger pieces in mind. Add cruched crackers, melted butter, beaten egg, milk, salt and pepper. Add 1 1/2 cups of the cheese and mix well. Pour into a greased cassreole and bake at 400 for 45min or unitl golden brown. Top with remaining cheese.
