2 pounds squash, cooked dry
1 onion, finely chopped
1/2 stick butter
2 t. salt
1 t. sugar
1 t. pepper
2 eggs
1 c. cornbread crumbs
2 c. white bread crumbs
more white bread crumbs for coating

Directions:
Directions:
Bake squash at 350 for 1 to 1 1/2 hours until cooked dry. Chop squash and add all other ingredients. Form into croquette using about 1/4 c. each. Roll in additional white bread crumbs. Refrigerate until firm. Fry in a little oil till brown and crisp. Freeze unfried croquettes until needed.
