2 oz warm water, 90-110F
1 tbs. active dry yeast
14 oz bread flour
6 oz. cool water
1 tsp. salt
1 oz. olive oil
1 tbs. sugar

When working with yeast dough, be careful of your water temp. Water over 116F can kill the yeast and water less than 90F can fail to activate the yeast. Stir the warm water into the yeast and sugar to dissolve. Allow to bloom at room temp for 10 minutes. Add the flour and mix.
Add the remaining ingredients to the four and mix with a mixer using the dough hook or knead by hand until dough is smooth and elastic.
Place the dough in a lightly greased bowl and cover. Allow the dough to rise in a warm place for 30 min. Punch down the dough and divide into portions. The dough may be wrapped in plastic and refrigerated for up to 2 days.
On a lightly floured surface, roll dough into very thing rounds adn top as desired.
Bake 400 for 8 - 12 minutes, until crisp and golden brown.
