3 c. flour
1 1/2 c. shortening
1 egg
1 egg yolk (save white)
3/4 tsp. salt
1 1/2 tbsp. lemon juice
7 1/2 tbsp. cold water
Filling:
1 1/2 c. sugar
1 1/2 tsp. cinnamon
3/4 tsp. salt
3 tbsp. flour
3 tbsp. tapioca
12-14 medium apples peeled and sliced

Directions:
Directions:
Mix crust ingredients together and put 1/2 of amount in bottom of pan. Mix filling ingredients together and put on top of crust. Dot with butter. Cover with remaining 1/2 of dough, seal. Whip egg white until foamy and add 1 tsp. sugar. Spread on top crust. Bake at 375 for 40-50 min. or until nicely browned and done.
