4 large potatoes
8 oz. bacon, diced
1 medium onion, diced

Dressing:
2 T. vinegar
1 T. sugar
1 c. sour cream
1 tsp. Dijon mustard
salt and pepper to taste
parsley

Directions:
Directions:
Cook potatoes til done and drain. In a frying pan cook bacon til done, remove bacon from pan and drain. In the bacon grease saute onions til transparent. Add the onion and bacon to the potatoes.

Dressing:
Combine vinegar, mustard, sugar, salt and pepper. Whisk; fold in sour cream. Toss while potatoes are warm. Serve warm or at room temperature. Sprinkle with parsley.
