2 or 3 Beef Shanks
3 or 4 Potatoes (Diced)
1 Cup Sliced Carrots
1 Cup Chopped Celery
1 Medium Onion Chopped
2 Beef Bullion Cubes
1 Bay Leaf
Salt & Pepper

Directions:
Directions:
Cover shanks with water in large pan; bring to boil. Add bay leaf. Reduce heat; cover and simmer 2 hours or until meat on shanks is fork tender. Remove shanks and cut meat of bones. Let stock cool slightly. Skim fat off stock. Add meat and vegetables. Heat to boil, cover and simmer till veggies are tender.
