1 lb cooked shrimp
1 cup cooked rice
1 6.5 oz pineapple chunks, drained, save juice
1/2 cup green pepper cut into 1 inch pieces
1/2 cup onion cut into 1 inch pieces
4 Tbsp pineapple juice
4 Tbsp low-sodium soy sauce
1 tsp sugar
2 cloves of garlic minced
1/4 cup chopped fresh cilantro

Directions:

Spray skillet with non stick cooking spray or 1 tsp cooking oil. Place on med. high heat. Saute onions, green pepper, and garlic cloves for 2 min. Add all remaining ingredients and heat through. Serve immediately.
