1 (12 oz.) jar apricot or peach preserves, divided
1/4 cup lemon juice
2 tsp. soy sauce
1 cup bread crumbs
1/4 cup butter or margarine, melted
3 lbs. chicken pieces

Directions:
Directions:
Preheat oven to 350-degrees. In a shallow dish, combine about 1/2 of preserves, lemon juice and soy sauce; mix well. Coat chicken with preserves mixture. Roll in bread crumbs. Reserve remaining preserves. In a greased 13x9-inch pan arrange chicken; drizzle with butter or margarine. Bake 1 hour or until tender. In a small saucepan, combine remaining preserves and heat through. Serve with chicken.
Serves 4 to 6.
