1 lb. mild Italian sausage
1 cup chopped onion
2 cloves garlic, sliced
5 cups beef broth
1/2 cup water
1/2 cup dry red wine (optional)
2 cups chopped tomatoes
1 cup thinly sliced carrots
1/2 tsp. basil
1/2 tsp. oregano
8 oz. can tomato sauce
1 1/2 cups sliced zucchini
1 med. green pepper, chopped
8 oz. cheese tortellini
3 t. chopped parsley
grated Parmesan cheese

Crumble sausage in pan and brown it in a deep soup kettle or pan
Drain, reserving one T. of drippings.
Saute onion and garlic in drippings until tender.
Add beef broth, water, wine, tomatoes, carrots, basil, oregano, sauce, and sausage.
Bring to a boil.
Simmer uncovered for 30 minutes.
Skim fat.
Stir in remaining ingredients except cheese.
Simmer, covered, 35-40 minutes or until tortellini are tender.
Sprinkle Parmesan cheese on top of each serving.
