1 1/2 c. flour
1/3 c. sugar
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/2 c. unsalted butter, melted
1 c. sour cream
1 egg
1 tsp. vanilla
2 bananas, diced
3/4 c. walnuts, chopped

Directions:
Directions:
In a bowl, sift together dry ingredients. In another bowl, melt the butter, then whisk in sour cream, egg, and vanilla. Stir bananas and nuts into butter mixture. Then stir butter mixture into flour mixture until just combined. Divide batter (which is very thick) evenly amongst muffin cups that have been sprayed with Pam, filling muffin cups to the top. Bake at 400 F for 20 minutes for standard muffins, 30-35 minutes for jumbo muffins, and 13-14 minutes for mini muffins.

This is a mix-in recipe. The batter is a standard muffin base and you can substitute anything you want for the bananas and walnuts.
