1 c. sifted flour
1/4 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. quick oatmeal
3 tbsp. shortening
1 egg, beaten
1 c. milk

Directions:
Directions:
Sift together flour, sugar, baking powder and salt. Add oatmeal and blend. Cut in shortening until mixture resembles corn meal. Add beaten egg and milk, stirring lightly. Fill greased muffin tins 2/3 full. Bake at 425 15-20 min., depending on size of muffins.
Variations: Combine 1/3 c. brown sugar, 1 tbsp. flour, 2 tsp. cinnamon and 1 tbsp. melted butter. Sprinkle over muffins before baking.
