4 loin or shoulder pork chops
1 tsp. salt
1/8 tsp. pepper
Flour
2 T. shortening
2/3 c. rice
3 c. boiling salted water
4 thick slices tomato
4 thick slices green pepper
4 slices onion
2 T. butter

Directions:
Directions:
Preheat oven to 350

Wipe chops with a damp cloth. Sprinkle with seasoning, dredge with flour. Brown in hot fat and place in a 13x9 casserole dish

Cook rice 5 minutes in boiling water.

Place slice of tomato, green pepper and onion on each chop; sprinkle with salt and pepper.

Pour rice and water around chops (all of it)

Dot with butter. Cover and bake at 350 1 hour or until rice and chops are tender.
