1/4 cup oil
8 links smoked sausage, cut into 1/4-inch rounds
2 lbs. boneless chicken, cut into 1-inch cubes
1 tsp. cayenne pepper
2 large onions, chopped
1 cup green pepper, chopped
2 Tbsp. garlic
3 cups white rice
5 cups chicken stock or broth

Directions:
Heat oil in large saucepan over medium heat. Cook sausage 5 minutes and remove from pan. Add chicken, cayenne pepper and cook 5 minutes or until done. Remove from pan. Add onions, green peppers and garlic to pan and cook 8 to 10 minutes until softened. Add rice. Cook, stirring 3 to 5 minutes. Return sausage and chicken to pan. Add stock or broth. Increase heat to medium-high and bring to a boil. Cover and reduce heat to low. Cook 25 minutes and remove from heat. Let stand, covered 10 minutes. Serve.
