1 c. finely diced mango
1/2 large red bell pepper, seeded and chopped
1/4 c. finely chopped red onion
1 small fresh jalapeno chile, seeded and diced
2 cloves garlic minced
3 tbsp. lime juice
1 tbsp. olive oil
1 tbsp. chopped fresh cilantro
Salt and freshly ground pepper to taste

In medium bowl combine mango bell pepper, onion, chile, garlic, lime juice, oil, cilantro, salt and pepper. Let stand at room temperature 30 min.
