8 large potatoes 1 1/4 c. shredded Cheddar cheese 1/2 c. butter 1 1/2 c. sour cream 1/3 c. chopped green onions 1 tsp. salt 1/4 tsp. pepper
Cook potatoes with skins in salted water. Cool and peel. Shred them coarsely. Melt butter over low heat and also melt cheese. Fold in sour cream and onions, salt and pepper. Fold into potatoes. Put in greased 2 qt. casserole. Dot with butter and a little cheese. Bake at 350º until heated about 30 min.
