2 cups flour
2 cups sugar
2/3 cup cocoa
2 tsp baking soda
1 tsp. baking powder
1/2 tsp salt
2 eggs
1 cup milk
2/3 cup veg. oil
1 tsp. vanilla extract
1 cup brewed coffee (room temp)
1 pkg. (3 oz) cream cheese softened
1/4 cup creamy peanut butter
2 cups conf. sugar
2 TBS. milk
1/2 tsp. vanilla extract
mini semisweet chocolate chips optional

Preheat oven to 350
In a mixing bowl, combine dry ingredients. Add eggs, milk, oil, vanilla and beat 2 minutes. Stir in coffee. (Batter will be thin.) Pour into greased 13x9 inch baking pan. Bake for 35 to 40 minutes. Cool completely. For frosting beat cream cheese and Peanut butter until smooth. Beat in sugar, milk and vanilla. Spread over cake. Sprinkle with chocolate chips if desired. Refrigerate.

Jeff really liked this cake when I put mint flavored frosting on it instead of peanut butter.
