3 c. flour
2 c. brown sugar
1 c. canola oil
15 ounce can pumpkin
2 eggs
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. ginger
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda

Filling: 8 oz soft cream cheese
3 T. soft butter or marg.
2 c. conf. sugar

Combine sugar, oil, pumpkin and eggs. Add dry ingredients. Drop by teaspoonful onto greased cookie sheet. Flatten slightly with a spoon. Bake in 350 oven for 8-10 mins or until they spring back to touch. Cool and fill.

Filling : whip cream cheese, butter and conf. sugar until smooth. (May need to use more conf. sugar)
