Use equal parts diced white sweet onion and diced fresh tomato. 1 bunch cilantro juice from 2 limes minced chili peppers to taste (I use 3 Anaheim and 2 jalapeņo peppers) salt to taste (I use less than 1/2 tsp.)
Combine all ingredients in small bowl. Great with black beans and rice and in bean burritos.
