1/3 cup plant-sterol margarine
3/4 cup sugar
2 egg yolks from Omega-3 eggs
1 cup mashed bananas
1/4 cup unsweetened applesauce
1 1/2 cups all-purpose flour, sifted
1/2 cup whole-wheat flour
1/4 cup ground flaxseed
1/2 teaspoon baking soda
3/4 cup chopped walnuts
2 egg whites

Directions:

1. Preheat oven to 350.
2. Cream margarine and sugar together using an electric mixer.
3. Add egg yolks and mix until blended. add mashed bananas and applesauce, Blend well.
4. In a separate bowl, whip egg whites until stiff peaks form. Fold egg whites into bread batter.
5. Place batter in an 8x4x2 loaf pan pre-coated with non-stick cooking spray.
6. Bake at 350 for 1 hour or until toothpick check comes out clean.
