9 oz. pasta
4 T. olive oil
1 T. minced garlic
2 zucchini (about 1 lb. trimmed and coarsely shredded)
1/2 c. pine nuts
3/4 tsp. salt
1/4 tsp. black pepper
1 T. fresh lemon juice
2 oz. shaved Parmesan cheese

Cook fettuccini. Drain. Put in large bowl. In large skillet, heat 2 T. olive oil and garlic and zucchini. Saute 1 minute. Meanwhile, toast pine nuts. Add zucchini to pasta along with toasted pine nuts, salt and pepper, lemon juice and remaining 2 T. olive oil. Toss to combine. Sprinkle with Parmesan cheese. Serve immediately.
