1/2 cup shortening
1 cup brown sugar, packed
1 egg
1 cup milk
2 tsp. vanilla
2 cups flour
1 tsp. baking soda
1/2 tsp. salt

Directions:
Directions:
Cream shortening and brown sugar. Add egg, milk and vanilla. Combine the dry ingredients; add to creamed mixture just until combined. Fill greased muffin tins or use muffin papers. Bake at 400-degrees for about 20 to 30 minutes. Cool 5 minutes before removing from pan to wire rack.
Makes 12 muffins.
