1 - 16 oz. can Salmon
1/2 c. - Onion (chopped)
2 tbsp. - Butter
2/3 c. Fine Dry Bread Crumbs
2 - Eggs (beaten)
1 tsp. - Dried Dill Weed
1/2 tsp. - Dry Mustard

Directions:
Drain Salmon reserving 1/3 cup liquid. Discard bones & skins from Salmon, flake meat. Cook onion in butter until tender but not brown. Remove from heat. Add reserved salmon liquid, 1/3 cup of bread crumbs, beaten eggs, dill weed and dry mustard to the flaked Salmon and mix well. Shape into patties. Coat the patties with the remaining bread crumbs and cook in skillet with oil. About 3 min. each side or until browned.

I usually double this recipe to make 8 patties. I serve this dish with creamed peas in a light cream sauce on top. See my recipe for the cream sauce. It's one of my family's favorites.
