1 lb medium fresh cooked shrimp, peeled and deveined
1 (14 oz) can hearts of palm, drained and cut into bite size pieces
1 (8 oz) package sliced fresh mushrooms
1 pint cherry tomatoes, halved
1 1/2 c vegetable oil
1 c white vinegar
3/4 c chopped fresh parsley
3 garlic cloves, minced
1 tbsp salt
1 1/2 tsp dried thyme leaves
1 tsp ground black pepper

Directions:
Directions:
In a large bowl, combine shrimp, hearts of palm, mushrooms and tomatoes. In a screw-top jar, combine oil and remaining ingredients; cover tightly and shake vigorously. Pour dressing mixture over shrimp mixture, tossing gently to coat. Cover and refrigerate for 8 hours.
