1 tbsp olive oil
4 slices bacon, cut into 1/4 inch strips
1 1/2 c long grain white rice
1 can beef broth
1/3 c water
1/2 tsp salt
1 can black eyed peas, drained and rinsed
1 tbsp dried parsley

Directions:
Directions:
In a medium saucepan, heat oil over medium high heat. Add bacon strips; cook stirring occasionally, for 3 minutes until the fat begins to render out. Add rice, stirring to coat rice with bacon fat. Add broth, 1/3 c water and salt. Bring to a boil over medium high heat. Cover; reduce heat to low. Simmer 12 minutes or until rice is tender and most of liquid has been absorbed. Add black eyed-peas, stirring evenly to distribute. Simmer, covered for 3 minutes or until rice is tender and all liquid is absorbed. Stir in parsley.
