1/4 cup butter
1/2 cup graham-cracker crumbs
1/2 cups quick-cooking oats
3 T. sucanat or brown sugar
2 T. whole wheat flour
1 tsp cinnamon
2 pounds apples, sliced thin
1/4 cup xylitol or sugar

Directions:
To make topping, melt butter in a small microwave-safe bowl. Stir ingraham crackers, oats sucanat, flour, and cinnamon, until blended. Put apples and xylitol in an 8-inch square microwave-safe dish; toss to mix. Sprinkle topping evenly over apples. Microwave uncovered on high 8 to 10 minutes until apples are tender when pierced. Let stand directly on heatproof surface 30 minutes until warm and topping is firm.

I love to use different fruit for this dish. Cherries, blueberries, blackberries, and peaches are all good. It is great with icecream on top. Very quick and easy to do.
