2 c. cooked rice
5 slices bacon
1/4 c. chopped onion
1/4 c. green pepper
2 Tbsp. soy sauce
1/3 can chopped water chestnuts
1 (3 oz.) can mushrooms drained
3 eggs, slightly beaten

Directions:
Directions:
In large skillet, fry bacon and crumble. Chop onion , green pepper, water chestnuts, and 7 mushrooms. Stir-fry onion and green pepper in bacon grease until tender. Stir in rice and all ingredients except eggs. Stir fry for 3 minutes. Push food to the side and add beaten egg. Cook eggs until scrambled. Stir all ingredients together until well mixed. Serve hot.
