2 lb. fresh sauerkraut, rinsed and drained
1 lb. new potatoes, halved
1 tbsp. oil
4 1/2 in. thick pork chops
Salt and pepper
3/4 c. water
1/4 tsp. salt
1/2 tsp. pepper
1/2 tsp. caraway seeds

Directions:
Heat oil in large stainless steel or non-stick pan over medium high heat. Iron or aluminum may react with acidity in sauerkraut and give it an off flavor and color.
Sprinkle chops with salt and pepper to taste; brown on both sides, 4 min. in all. Remove. Put potatoes in same pan, brown cut side, 2 min. Remove. Pour in water, scrape up browned bits on pan bottom. Add sauerkraut and rest of ingredients. Lower heat; simmer covered, until chops are very tender, about 40 min. Taste for seasoning, add more salt and pepper if needed.
