1 1/2 c flour
1 1/2 tbsp sugar
1 1/2 tsp baking soda
1/4 tsp each grated nutmeg and salt
1 1/2 c buttermilk
1/2 c mashed bananas
2 eggs
1/4 c unsalted butter, melted
Vegetable oil, for griddle

In large bowl, mix flour, sugar, baking soda, nutmeg and salt. In a 1-qt bowl, whisk buttermilk, mashed banana, eggs, melted butter; add to flour mixture. Stir well until evenly blended. Place baking sheet in oven; preheat to 200. Preheat griddle or large heavy nonstick skillet over high heat. When griddle is hot, reduce heat to medium. Lighlty oil griddle. For each pancake, ladle 1/4 cup batter onto griddle. Cook about 3 minutes until pancakes are lightly browned. Turn pancakes over, cook until browned about another 2 minutes. Transfer pancakes to baking sheet in warm oven. Cook remainder of batter. Serve pancakes with honey and whipped butter.
