1 cup rice; 2 c. water or chicken broth; (may use leftover rice also)
1 1/2 tsp. turmeric; 1/2 salt (opt.); pepper to taste;1/2 tsp. chili powder and paprika; 1/4 - 1/2 c. chopped onion; 1/4 c. bell pepper (opt)

Directions:
Directions:
Bring liquid to a boil, add spices and rice. Stir and reduce heat, simmer @ 14 minutes. Stir in satueed onion and pepper or these may be added as the rice cooks.
If you have cooked rice, sautee the onions and pepper with the spices. Add the rice and a small amount of water to the onion mixture. Stir and simmer @ 5 minutes.
