You prepare this the same as any 'ole omelet, except it has green beans in it! Quantity is to taste, as is your preference for cooked or raw beans.

I don't know the origins of this recipe, but I learned it in Costa Rica. I sprung it on my parents when I came home; they were wary at first, but thought it quite good.
