1 Stew Chicken (3-4 lbs.) 1 - 2 C. sliced carrots
1 Onion (sliced into rings) Chicken Bouillon Cubes
or Chicken Broth
MEATBALLS;
4 lbs. (LEAN) hamburger 5 Eggs
1 - 2 C. cracker or dried bread crumbs

CREAM OF WHEAT DUMPLINGS
3 cups Milk 1/4 - 1/3 C. shortening
1 - 2 C. cracker or dried bread crumbs
1 1 C. Instant Cream of Wheat 4 Eggs

Boil chicken in a large soup pan for about 2 hours. Remove chicken from broth, let cool and shred into small pieces. Cool the broth and skim off the fat. (Mom cooked the day before and let cool so that the fat was easier to skim off) Reheat the broth, add 3-4 chicken bouillon cubes or 1-2 cans chicken broth---to taste

Bring broth to a boil again. Add sliced carrots, and onion rings, let cook at a very low heat while preparing the meatballs.


MEATBALLS;
Roll each to size of walnuts.
30 minutes before serving soup add meatballs, turn off the heat, cover and do not remove the cover for 30 min. Serve over cream of wheat dumplings


CREAM OF WHEAT DUMPLINGS:
Bring to boil (scald) salted milk. Add Instant Cream of Wheat (real stiff). While hot-add shortening, stir and let cool. Add eggs and cracker or bread crumbs (to stiffen). Roll into size of a small egg (will swell). Shortening on your hands helps. Boil in salted water approx 10 minutes. Place into individual bowls, pour hot soup over dumplings.

Personal Notes: This has been a Christmas Eve tradition for our family since I was a little girl. Now, I serve Christmas Soup to OUR family every Christmas Eve to carry on the tradition.
(I cut the recipe in half for the meatballs and the dumplings)
