1 cooked rotisserie chicken from the grocery store
2 cans enchilada sauce (or 1 big can)
3 cups shredded chedder cheese
1 jalapeno
1/2 cup light sour cream
flour burrito size tortillas

Directions:
Directions:
Take rotisserie chicken and pick apart until you have a bowl full of shredded chicken. To the bowl of shredded chicken add sour cream, 1 cup chedder cheese and 1/2 cup enchilada sauce. Stir mixture together. On the bottom of a casserole dish put a little bit of enchilada sauce to cover a thin layer. Then put chicken mixture in a tortilla and fold like a burrito. Place "burrito" in casserole dish. Make as many as needed then pour the rest of the encilada sauce on top of "burritos" and put the rest of the chedder cheese on top with sliced jalapenos. Bake at 350 for 20 minutes or until heated all the way through.
