Beer Cheese Soup Recipe

4 tbsp. butter
1/4 c. chopped celery
1/2 c. chopped onions
1/4 c. carrots, finely chopped
5 tbsp. flour
1/2 tsp. paprika
1/2 tsp. dry mustard
1/2 c. beer
1 c. chicken broth
1 c. grated American cheese
1 c. grated cheddar cheese
2 tbsp. chopped dill
2 tbsp. chopped parsley
1 c. half and half
1/4 tsp. tabasco sauce

Saute carrots, onions, and celery in butter until tender. Stir in flour. Cook on low heat 3-4 min. Don't brown. Stir in paprika, dry mustard, beer, and chicken broth. With wire whisk, whip until smooth. Add cheese and dill. Bring to a boil and let simmer 5-10 min. Remove from heat and stir in half and half, parsley, and tabasco sauce.
