8 egg yolks
1/3 C granulated white sugar
2 C heavy cream
1 vanilla bean (spilt down middle and scrap out seeds) or 1 tsp pure vanilla extract
1/4 C granulated white sugar (for caramelized tops)

Directions:
Directions:
Preheat oven to 300.In a large bowl whisk egg yolks and sugar. Add cream and vanilla and continue to whisk until well blended. Strain into large bowl, skimming off any foam. Divide into 6 ramekins. Place ramekins in a water bath. (large pan filled with 1-2 inches of hot water) Bake 50-60 minutes.( it will be set around the edges but still loose in center). Cool. Remove from water bath and chill for 2 hours or up to 2 days.When serving sprinkle with remaining sugar and melt with kitchen torch.(If you don't have a torch place under broiler until melted and re- chill a few minutes).
