Pastry for a Lg. 2 Crust Pie
8 c. - Granny Smith Apples(peeled and sliced)
1 Tblsp. - Lemon Juice
1/4 c. - Brown Sugar (firmly packed)
1/4 c. - Granulated Sugar
1/4 c. - Flour
Heaping 1/2 tsp. - Cinnamon
1/8 tsp. - Nutmeg
1/8 tsp. - Salt
2 Tblsp. - Butter/Margerine(divided into 8 parts)

Preheat Oven to 425 degrees
In Lg. Bowl, combine the apples and lemon juice.
Then fold in the rest of the ingredients.
For a double crust pie: Prepare your favorite pastry recipe(or use a ready made one).
Place the bottom layer of pastry into a large & deep pie dish..."lightly dust" the bottom crust with some flour and then add the apple filling, mounding it in the center and evenly distributing the apples around it. "Dot" filling with the butter/margerine. Add top crust, seal the edges and then with a fork or tip of a sharp knife, pierce several "vents" in the top crust. Lightly sprinkle top crust with sugar. Bake @425 degrees for about 50 min., 'til golden in color.
Note:To prevent the edge of the crust from getting too well done, I make a " collar" of foil and have it loosely around it for" half of the baking time" and then remove it...ALSO, at this point, I place a pizza pan on the rack below the pie, just in case it bubbles over...it's easier to clean the pan then clean the oven!

The title tells it all...our family is partial to "pie" for dessert and I enjoy making them...so that's a good combination(apple was always a favorite)!
