4 eggs
1 1/2 c. oil
2 c. sugar
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 c. grated carrots
1 c. coarsely chopped walnuts
1 c. raisins

Directions:
Directions:
In a mixer bowl, beat the eggs, oil, and sugar at high speed until light and fluffy. Sift dry ingredients together and add to the batter at low speed and mix just until 75% incorporated. Add carrots, walnuts, and raisins. Mix just until smooth. Pour into 2 prepared 9" pans and bake for 40-45 minutes, or until cake is done.
