3 Cups Sweet Potatoes, mashed
1/2 Cup Sugar
1/2 Cup Butter
1/2 Tsp. Salt
1-1/2 Tsp. Vanilla
2 Eggs, beaten
1/2 Cup Brown Sugar
1/3 Cup Flour
1 Cup Pecans, chopped
1/3 Cup Butter, softened

Directions:
Directions:
Microwave fresh sweet potatoes in a plastic bag about 15 minutes. Let sit 10 minutes. Skins will easily peel away. Mash sweet potatoes. Add sugar, butter, salt, and vanilla and beat together until butter is melted and mixed in well. Mixture should be warm, not hot. Add eggs and beat well. Pour into casserole dish. Combine brown sugar, flour, pecans, and softened butter. Sprinkle topping over sweet potato mixture. Can be frozen at this point for future use. Bake uncovered at 350 for 25 minutes (longer if frozen).
